I thought of the snacks my family enjoys, then added a twist. An avocado twist. This avocado hummus recipe is easy to prepare and has a great flavor! It’s perfect for Super Bowl parties, potluck dinners and everyday snacking!
To begin, you will need:
1 16 oz can of chickpeas (garbanzo beans)
1 medium avocado
1/4 cup liquid from can of chickpeas
3-4 tablespoons lemon or lime juice (depending on taste)
tiny amount of lemon or lime zest
2 cloves crushed garlic
1/2 teaspoon salt
pepper to taste
1-2 tablespoons olive oil
Drain chickpeas and reserve liquid from can. Combine remaining ingredients in blender or food processor. Adding 1/4 cup of liquid from chickpeas. Blend on low for about 4 minutes until thoroughly mixed and smooth. (You may have to scrape the bowl halfway through blending.)
Place the mixture in a serving bowl, and create a shallow well in the center of the hummus. Add a small amount (1-2 tablespoons) of olive oil in the well. I like to add more crushed garlic to the well, too.
Serve immediately with pita chips or wheat crackers. (You can dip veggies into it, too!) The mixture can also be covered and chilled in the refrigerator.
