My favorite salad is simple and beautiful. It is great for potluck dinners and wonderful for serving to your guests. The 7 layer salad.
To begin, you will need a large bowl. I always use a clear bowl (because it’s pretty when assembled), but if you don’t have a clear bowl, by all means, use something else. I usually estimate all of the ingredients. If you have 5 eggs instead of 6, that’s ok. Some people throw in a layer of tomatoes. That’s ok, too!
- 5-6 cups chopped lettuce
- 6 hard-cooked eggs, diced
- 1/2 cup red onion, diced
- 2 cups frozen peas, thawed
- 8 to 16 ounces bacon, crisp-cooked, drained, and then crumbled
- 2 cups shredded mild Cheddar cheese
- 1 cup mayonnaise or plain greek yogurt
- 1 tablespoon sugar
Place 1/2 of the lettuce in bottom your bowl. Sprinkle the egg over the lettuce and dash with salt and pepper. Add the peas over the egg, then lightly add a layer of onion. Next, add the crumbled bacon and then add a layer of cheese. In a separate bowl, combine mayonnaise or yogurt with sugar. Spread this over the top, bringing the mixture all the way to the edges of the bowl, covering the entire salad. Garnish with very little green onion, if you desire. Cover and chill for about 24 hours or overnight. Enjoy!
