With Spring Break coming to an end, I promised my children we would save one day to make ice cream sandwiches!  I love to get in the kitchen to bake, so I figured the opportunity would be a fun one for all of us! Plus, who doesn’t enjoy spending time in the kitchen with three emerging chefs?

We started by baking up a package of Nestle Toll House Ultimate Chocolate Chip Cookie Dough.  Having the cookies pre-sliced helped so much!  It was also a good way to teach my children about portions and uniformity.

As the cookies were baking, I filled a paper cup with ice cream.  (You can use any flavor!  We used a combination of chocolate and vanilla.)  You want to pack in the ice cream as you are filling the cup.  We placed this cup back in the freezer so it didn’t melt.

After the cookies were baked, we took them out to cool and waited patiently.

I then cut thin slices of the filled paper cup, then put each circle on top of a cookie.  It was so easy for my children to peel off the paper and get perfect circles of ice cream for their sandwich!

 The result?  An absolutely perfect afternoon snack!

These sandwiches would be fun for birthdays parties, too!  The Nestle Toll House Chocolate Chip Lovers  Cookie Dough made the process that much easier – it was a great way to get kids in the kitchen!
