I made homemade marshmallows for my daughter’s upcoming Princess Party Ball. At the party, we will serve desserts. Many different types of desserts.  It’s only fitting for a tea party, right?

While taking my son to the doctor’s office today, this was the conversation:

Me: Guess what I made for Ava’s  Birthday Party?
My son: What is it?
Me: Marshmallows. And they are yummy!
My son: I can’t wait to eat those! Can you write down the recipe for me on some paper? I want to make those when I get bigger. Then I can make them when I have a boy or a girl.
Me: Of course I can!
My son: Can you write it down two more times? I want Ava and Blake to be able to make them when they are bigger, too.

So, as requested, here is the recipe:

4 envelopes unflavored gelatin
3 cups granulated sugar
1 1/4 cups light corn syrup
1/4 teaspoon salt
2 teaspoons pure vanilla extract
1 1/2 cups confectioners’ sugar
1 1/2 cups water divided in half

Spray 9×13 lightly with cooking spray.  Line the pan with parchment paper coming up the sides (at least 2 inches) on each end.  Spray the parchment papre lightly with cooking spray. 

Put granulated sugar, corn syrup, salt, and 3/4 cup water into a medium saucepan. Bring to a boil over high heat, stirring to dissolve the sugar. Without stirring, continue to cook syrup until mixture registers 238° on a candy thermometer, about 9 minutes.

While the syrup is boiling, pour 3/4 cup water into the bowl of stand mixer. Sprinkle the gelatin on the water and let it sit for about 5 minutes so the gelatin softens. 

When sugar syrup reaches the desired temperature, slowly pour the hot syrup into the gelatin.  With the whisk attachment on your mixer, beat on high for 12 minutes until marshmallow is very stiff.

Add vanilla and beat for 1 more minute.  Pour marshmallow into prepared pan and spread with a spatula. It will be sticky!  Let sit for at least 3 hours uncovered.

After at least 3 hours, sift 1 cup powdered sugar onto your work space.  Remove the marshmallow from pan onto the sugared counter/work area by flipping the pan upside down.

Using a very sharp knife, cut the marshmallow into squares.  (I cut my marshmallow into strips, then cut into squares afterwards.)  You may also find it helpful to spray your knife occasionally with light cooking spray.)

Sift the remaining 1/2 cup powdered sugar into a bowl and coat each cut marshmallow with the sugar.  Or use cocoa.  Or use cinnamon. 

*As you can see in the picture, I dipped some of my marshmallows in chocolate.  Oh yes I did!

 

You can store the marshmallows for up to one week in a semi-airtight container.  I used a pyrex bowl with a lid.
These marshmallows make great gifts for the holidays, too!
