Bake the Perfect M&M Cookies This Week

The last week of school was much anticipated, though stressful.  I was certain my children deserved an afternoon treat like no other.  A treat that would fill their hearts and body with that warm fuzzy feeling we all look for every now and then.  And I found just what they were looking for.

Imagine a cold glass of milk paired with a fresh-from-the-oven, soft baked M&M Cookie. Oh yeah.  I went there.  But it wasn’t just any M&M cookie.  I threw in some chocolate chunks and a ton of love (which didn’t go unnoticed.)

These cookies are really easy to make, and I bet your children could help to make these on a rainy day over the summer!

 Soft Baked Chocolate Chunk M&M Cookies

  • 2 and 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 12 Tablespoons unsalted butter, softened
  • 1/2 cup granulated sugar
  • 3/4 cup light brown sugar, packed
  • 1 Tablespoon vanilla extract
  • 2 large eggs
  • 1 and 1/4 cups M&Ms
  • 1/4 cup chocolate chunks (I like to break pieces off of a Hershey bar)

Directions:

Preheat oven to 350 degrees. Line a baking sheet with parchment paper, spray with non-stick spray or use a silicone baking mat. Set aside.

In a medium bowl, whisk together the flour, baking soda, and salt.  Set this bowl aside.  In a large bowl, using an electric or stand mixer, cream together the butter, granulated sugar, light brown sugar, and vanilla extract until combined.  Add eggs one at a time, mixing to combine between each egg.

Add the flour mixture to the wet mixture, mixing until just combined.  (Do not overmix this!)  Gently stir in the  M&Ms and chocolate chunks until incorporated.

Using a cookie scoop, scoop dough into balls about and place onto prepared baking sheet.  Bake for 10-12 minutes or until light golden brown around the edges.  Let cookies rest on the baking sheet for 1 minute before removing.
