With Thanksgiving right around the corner, we are all looking for quick and easy side dishes that will help fill those bellies at the dinner table!
My husband makes an amazing roasted potato dish that my children love to eat. In fact, they ask for this side quite often, knowing we are happy to oblige! I will warn you, though… this recipe smells amazing, but does take about 50 minutes to cook.
5-6 medium potatoes (either red, white or Yukon Gold), peeled
1 tablespoon extra-virgin olive oil
1 tablespoon of your favorite seasoning (ex: Season-All)
1/2 teaspoon kosher salt
1/2 teaspoon pepper
2-3 dashes of basil and/or garlic powder
Preheat the oven to 425°F.
Halve the potatoes then chop them into bite-sized pieces. In a baking dish, add 1/2 tablespoon of olive oil, then add potatoes. Drizzle the remaining olive oil on top, then add the seasoning. Make sure the potatoes are evenly coated by using your hand or two large spoons to mix well.
Bake for 45 to 50 minutes, until the potatoes are golden, checking after every 15 minutes.
Just look at them. Isn’t that mouth watering?
