Grapefruit

When I think of grapefruit, I think of breakfast.  I used to eat fresh fruit every morning for breakfast, yet never associated it for dinner.  Until now.

After receiving information on a Grapefruit 101 Workshop held in Dallas, I realize there are so many dishes that can be made, using fresh grapefruit from your local farmer’s market or grocery store!

Did you know:

  • In 1929, Texas Citrus growers accidentally discovered the sweet red grapefruit that we all know and love as the Rio Star or Ruby-Sweet.
  • Over several decades after the sweet red grapefruit was discovered, even redder mutations of the fruit were discovered and each one was named after the grower who found it.
  • The Ruby Red was the first grapefruit to be granted a United States patent.
  • The Texas Red Grapefruit was named the State Fruit of Texas in 1993.

With it’s distinctive flavor, I decided to cut up a grapefruit and get some appetizers for dinner started. 

One appetizer I made:

Rio Star Grapefruit-Pecan Cream Cheese Topper

Ingredients:
1/2 Texas Rio Star Grapefruit, sectioned
2/3 cup pecans, finely chopped
8 ounces cream cheese, softened
2 tablespoons grapefruit zest

Directions:
Combine all ingredients and beat until smooth and of spreading consistency.  Refrigerate until ready to use.  Spread over your favorite bagel, English muffin, toast or on crackers!
