If you ask my children what their favorite meal is, they are likely to say breakfast 9 times out of 10, and I will never sway them otherwise.  It’s obvious they get it from their mom and dad.  I love breakfast just as much as I love a good dinner, and love it even more when the breakfast can be made with less than 10 ingredients and in less than 25 minutes.  So imagine a breakfast “pig in the blanket.”  Sounds delicious, right?  Well, if your mouth isn’t watering yet, let me guarantee you that it is every bit of what you’re imagining!  It’s a breakfast roll-up that is perfect for busy mornings, nights when you have breakfast for dinner and can even double as a quick snack after school.  (And this will be great for summer mornings when the temperature in Texas will rise to 100 degrees! It’s not too heavy, but very filling!)

This week, I’m working with Jimmy Dean® to create a fun, quick and easy breakfast using fully cooked sausage, with just five other ingredients.  These breakfast roll-ups are so easy to make, my 10-year-old daughter couldn’t wait to get in the kitchen to help me out!  (We are definitely going to make them again over the summer!  It’s the perfect indoor activity!)

I hinted that these sausage, egg and cheese breakfast roll-ups would also be perfect for our Mother’s Day brunch, hoping my daughter gets Dad to our local HEB to go shopping for the ingredients!  (Make sure you tell Dad he can find the Jimmy Dean® fully cooked sausage on the refrigerated breakfast meat aisle!)

When my boys tried the breakfast roll-ups, they asked for another, then asked for a third.  The unique, savory blend of Jimmy Dean®’s signature seasonings goes great with the scrambled egg and cheese!  It’s the perfect combination, and I loved that the sausage was already cooked for me, saving us from having to do one step! This busy mom needs all the help she can get!

As we were cooking, my husband noted how the Jimmy Dean® Fully Cooked Sausages would be great to put on egg and cheese biscuits or in an overnight casserole.  I want to try the sausage in a quiche and can’t wait to make this breakfast taco recipe, found right on the HEB App!

Breakfast Roll-Ups

Ingredients 
2 cans (8 oz) refrigerated crescent dinner rolls
1 package of fully cooked Jimmy Dean® links
6 large eggs
6-8 slices of American Cheese, each cut in half
salt and pepper to taste

Directions
Pre-heat oven to 350°F. In a medium bowl, beat eggs, adding salt and pepper to taste.  Scramble eggs in a skillet, on medium heat, removing from heat when done.

On a greased baking pan (or a baking pan with a silicone mat,) unroll the crescent roll dough into 8 triangles. (You will have to make two batches.) 

Place 1 cheese slice half on the large side of each crescent triangle.  Add 1 sausage link and top with a spoon of scrambled eggs.

Loosely roll each triangle, making the ends meet.  Pinching the edges together, if needed.

Bake for 12-15 minutes or until golden brown.  Serves 8, if each person eats 2 rolls.
