There’s one vegetable each of my children love to eat: carrots. Whether they are raw, steamed or included in another recipe, it’s a food I don’t have to beg them to try.
When we were thinking of new ways to enjoy our carrots, I mentioned what used to be my favorite side item from Chick-fil-A: Carrot and Raisin Salad.
Carrot and Raisin salad is sweet and delicious, with a little hidden ingredient I never knew was there. I remember making this as a kid, but we never added pineapples! This recipe is so easy for your children to make, and they will enjoy the finished product just as much!
Ingredients
3-4 cups of shredded carrots
1 Β½ cups crushed pineapple, cut into small pieces (only drain slightly)
1 cup raisins
1 cup mayonnaise
1 Tablespoon sugar, optional
Β½ teaspoon salt
2 teaspoons lemon juice
Combine the mayonnaise, sugar, salt and lemon juice in a bowl. Add the carrots, raisins and pineapple, mixing well. Refrigerate until ready to serve.

Ooo, so smart! My kids love raisins, and the combo with carrots could get a lot of veggies into the mix!
