When we moved to Texas, we were introduced to a delicious cookie that was missing from my taste buds: Cowboy Cookies.
Imagine oats, chocolate chips, pecans and M&M’s, mixed together to create a delicious cookie that your entire family will love! These cookies are very easy to make and an easy way to get your children to help in the kitchen!
Cowboy Cookies
2 cups all purpose flour (leveled)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, at room temperature
1 cup white sugar
1 cup brown sugar, packed
2 eggs
1 teaspoon vanilla
2 cups oats
1/2 cup M&Ms
3/4 cup semi-sweet chocolate chips
1/2 cup chopped pecans
Preheat oven to 350 degrees. Prepare baking pans with either cooking spray, parchment paper or a non-stick cooking mat.
In a medium bowl, combine the flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, cream together the butter, white sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually stir in the dry ingredients, but don’t over do it! (You still have more mixing to do.) Stir in the oats, pecans, M&Ms and chocolate chips. You may have to use a pair of clean hands to incorporate everything together.
Roll the cookie dough into 1 inch balls and place on the prepared baking pan. (No need to flatten the balls before baking.)
Bake for about 9 minutes. Let the cookies sit for 1 minute before removing from pan.
This recipe makes 2-3 dozen cookies. Since they are a little bit of crunchy with a hint of chewy… it pairs perfectly with an ice cold glass of milk.
Cookie Jar Gift
I also thought of a fun way to turn this into a cookie jar gift. They are that good!
Take a 1 quart Ball jar and layer the dry ingredients as follows:
1: flour, baking powder, baking soda and salt (tap the jar to allow contents to settle and pack in)
2: oats (again, tap to settle between each layer)
3: brown sugar
4: white sugar
5: M&Ms
6: chocolate chips
7: chopped pecans (if you found you’ve run out of room, you can cut down on the amount of pecans you add to the jar)
Simply include a note with baking time and directions to add the eggs, vanilla and butter!
