Honey Bunches of Oats No-Bake Cluster Snacks

I love to bake, but there are some nights I want to make a quick snack that my children will love.  When making after-school snacks, I love to incorporate items I already have in my pantry.  Since we always have a box of Honey Bunches of Oats on hand, it was easy to whip these no-bake cluster snacks up on a recent rainy school day.

 
Ingredients
  • 2 cups Honey Bunches of Oats with Almonds cereal 
  • 1 cup sugar
  • ½ stick butter (4 tablespoons)
  • ¼ cup milk
  • ⅓ cup peanut butter 
  • ¼ teaspoon salt
  • 1 teaspoon vanilla
Instructions

Start by melting the butter in a medium saucepan over medium heat.  Add the milk, sugar, salt and vanilla, stiring to combine.  Bring this mixture to a rolling boil, and boil for 1 minute.  (If you undercook the mixture, your treats won’t set.  On the flip side, if you overcook the mixture, they will crack.  Set your timer for 1 minute!)

After the mixture boils, remove the pan from the heat and stir in the peanut butter until completely dissolved.  Fold in the Honey Bunches of Oats.  Spoon the mixture into clusters, onto a silicone mat, wax paper or aluminum foil.  I like to use a cookie scoop to make sure the clusters are uniform in size, but a regular table spoon would work great, too.  

Allow the clusters to set for about one hour before eating.  

Makes about 24 snacks, depending on the size of each cluster.
