In January of this year, my husband and I started eating low carb.  I aim for no more than 40 carbs per day, while my husband keeps it under 20.  (I am still nursing, which is my reason for a higher number.)  We actually stick to a non-strict Keto diet, and let me tell you… it’s working!  (We will get stricter when my nursing journey is complete.)

For the most part, we leave out the bread, pasta, chips and condiments.  And for me, that’s the hard part.  I love chips and condiments, though not together!  We can still have other snacks that aren’t high in carbs, and I’m okay with that!

Low Carb Snacks

From pork rinds to cheese cubes to raw zucchini, I’ll admit those low carb snacks can get old.  In order for me to stick to a lifestyle change, I have to keep things interesting!  This list of low carb snack recipes are perfect – we’ve made at least 10 of these recipes this month, and I’m always looking to try more!
