There are a few things I look forward to over the summer, and homemade ice cream is on that list. We love adding new flavors to ice cream to see what we can come up with, but when we find ourselves with freshly picked strawberries, strawberry ice cream is bound to be made.
Strawberry ice cream reminds me of summer in more ways than one. It’s refreshing, it’s easy to make and it’s pink!
To make it, you need just a few ingredients: heavy whipping cream, half and half, strawberries, sugar, honey, lemon juice and vanilla extract.
1 1/2 cups strawberries
2 cup heavy whipping cream
1/2 cup half and half
1/2 cup sugar
2 TBS honey
1 tsp. lemon juice
1 tsp. vanilla extract
Start by preparing your strawberries. I wash and dry them well, then remove the stems and slice them in half.
In a large bowl, mix the strawberries with the sugar, honey, and lemon juice, and allow the mixture to sit about 20 minutes. (This process will make the strawberries release their natural juices.)
Next, you will use a blender, fork or potato masher to mash the strawberries until they are in small pieces. (I like to use the blender for a very smooth consistency.)
Add the heavy whipping cream, half and half, and vanilla extract to the strawberries. Pour into an ice cream maker and follow the manufacturer’s directions until set. (I have this ice cream maker and love it!)

Do you have a milk/dairy free alternative or recipe, it sounds delicious would love to use rice milk and almond milk!
