Many of my friends are switching to a Keto lifestyle. And I don’t blame them!  My husband and I are adapting to this way of eating next week, and I’m looking forward to the benefits of doing so!  (I felt so much better when we were in a state of Ketosis!)

One of my favorite things to make while on Keto is this 3 ingredient Cloud Bread.  It’s super easy to make, and it stores for a couple of days.

3 Ingredient Keto Cloud Bread

YOU WILL NEED:

  • 3 large eggs
  • 3 tablespoons cream cheese, room temperature
  • ¼ teaspoon baking soda OR cream of tartar
 
INSTRUCTIONS:
  1. Preheat your oven to 300 degrees fahrenheit. Line a baking sheet with parchment paper and set aside.
  2. Separate the egg yolk and egg whites into two bowls.

  3. Mix the egg yolks and cream cheese in a small bowl. Set aside.
  4. Using an electric mixer, whisk egg whites and baking soda OR cream of tartar on high speed until stiff peaks are formed, which should take about 5 minutes.
  5. Gently fold in the cream cheese mixture from step 3 to the egg whites in step 4. Try not to deflate the egg whites – keep them fluffy as you fold in the cream cheese mixture.
  6. Scoop the batter onto your prepared baking sheet into rounds the size of a hamburger bun. Make sure you leave some space between the rounds.
  7. Bake for 30 minutes, or until golden brown.

  8. Carefully remove the cloud bread from the pan and let cool. *This recipe will make about 10 rounds of bread, depending on the size.
    *I love brushing the bread with butter and adding a sprinkle of cinnamon! (Dessert!)

  2. OMG thank you!!! I was almost losing my mind on this Keto diet…I just wanted a SANDWICH!!! This bread is amazing! I just had a grilled cheese and my son had 2 burgers on it, we LOVE it! Making another (double) batch tomorrow!!!!

  3. Made this bread tonight. Wow! Such a nice addition to the Keto diet I have embarked on. Made a leftover lamb sandwich . Perfect way to utilize leftover meats.
    How’s long does it hold up for? Should it be kept in the refrigerator? Would like to know even though I don’t think it will last long enough to go bad around here:)

  4. When I added the egg yolk/cream cheese mix to the egg whites/cream of tar tar it was still pretty watery. Is it supposed to be thicker? Not sure what I did wrong, please help…need “bread”! Lol

    • Did you over mix it. When adding the egg yolks and cream cheese mixture, you just fold it in

  7. I made this just now. It’s easy and quick. It’s a very thin, very light omelette type texture. Not bread-like at all but would be pretty good as a burger or toasted cheese.

  8. Can this bread be frozen? My first effort wasn’t the best. I couldn’t get the egg whites stiff enough. The bread is still edible, not rounded and kind of runny. Still baked up nicely and tasted great. Made a great burger sandwich. I’ll try it again when this is gone. Thanks

    These are perfect! I made them larger then used my hands to shape into round buns. Hubby loves them. I can also use them for bread for my keto p&j sanwhiches for evening snack 😁

  11. This bread is delicious. I add my own ingredients to it such as garlic powder, onion powder, poppy seeds, sesame seeds, tarragon and parsley. It makes it so much more interesting. It freezes well as long as you seal it properly and it travels easily. I take it to restaurants and remove a roll or bun and replace it with cloud bread. Especially good on cheeseburgers! Enjoy!

  13. Not going to judge yet but doesn’t work for sloppy joes. The cloud turned into fluff.
    Perhaps as cold sandwiches or grilled cheese.

  14. Are these meant to be cut in half like a hamburger roll or use 2 one for top and one for bottom?
