With only one week of school left before summer vacation, it’s time to stock our freezer with snacks and desserts my children love.  With a family of six, we get a little creative and have movie nights often – and I like to have dessert on hand for the occasion.  One of our favorites? Ice cream sandwiches.  But not any ice cream sandwich… homemade ice cream sandwiches made at home with the ice cream flavor of your choice!

Now I know you must be thinking how hard and messy this process can be.  But I have a fool-proof trick that will knock your socks off, making these the easiest ice cream sandwiches you’ve ever made!

You will need a small disposable cup that is roughly the same diameter as your cookies.  (You can use a paper or plastic cup.)  You will then take the ice cream of your choice and scoop it into the cup, packing it down firmly as you go.  Once it is packed, you’ll want to place the cup back into the freezer for 5-8 minutes to let the ice cream harden again.  *If you need a good cookie recipe, check out these M&M cookies!

When you are ready to make the sandwiches, take the ice cream cup out of the freezer, and place it sideways on a cutting board.  With a sharp serrated knife, slice the ice cream into 1 inch slices.  (I usually get at least 3 slices per cup.)  Now, you’ll want to peel off the remaining ring from the ice cream slice and place it in the center of your cookie.  Top with a second cookie and serve immediately, roll in sprinkles or chopped nuts or place back in the freezer until you are ready to serve!

The best part is that this is so easy and everyone can customize their ice cream sandwich to their liking!  My daughter loves mint chocolate chip, my son loves chocolate and I love vanilla!
