My husband and I have been eating keto or low carb for a few months now. It’s been working so well for us, and we have gotten a little creative in the kitchen, changing up recipes to incorporate them into our lifestyle.
We decided to try BLT Sushi Rolls and they turned out incredibly good. While they are very filling, I could have eaten 6 more. It’s something everyone needs to try at least once! Just look at them:
Low Carb BLT Sushi
10 slices of bacon
3 TBSP mayonnaise
1 cup of tomatoes, diced
1/2 avocado, thinly sliced
1 cup of lettuce, shredded
salt and pepper to taste
Weave the bacon like a basket (5 strips down, 5 strips across) and bake at 425 for 15-20 minutes. Let cool.
After the bacon has cooled, spread a layer of mayo on bacon.
Add a layer of tomato and avocado.
Dress with lettuce, salt and pepper. (I bet you could add a little shredded cheese, too!)
Start from one side of the bacon, rolling tightly away from you. Slice into 6 equal parts and enjoy!

You may try it with cucumber wraps next time.
To start cutting, insert the moistened sharp knife ΒΌ of a centimeter into the cucumber and slowly slide the knife blade to get a thin layer. Keep cutting out layers until you reach the middle section of the cucumber that contains seeds. Discard it. Then you can use it to make yummy cucumber sushi rolls.
