My husband and I have been on the Keto journey for some time now.  We eat less than 20 carbs through the day, and I’ll be honest when I say there are some days I miss having a slice of “real” white bread on my ham sandwich.  (But I remind myself that I can indulge in this delicious recipe for BLT Sushi whenever I want.)  Lucky for us, I also have this amazing cloud bread recipe that always helps to satisfy my craving for a slice of bread.  And when I want more than the cloud bread for a good breakfast sandwich? I turn to the 90 second Keto English Muffin recipe found below.  It’s quick, easy and hits the spot!  *You can even use these for mini pizzas!

90 Second Keto English Muffin Recipe 
3 Tablespoons almond flour
1.5 Tablespoons melted butter
1/2 teaspoons baking powder
1 egg white
 
Simply mix the 4 ingredients in a mug and microwave for 90 seconds. Gently take the muffin out of the mug (you may have to go around the mug with a butter knife to loosen the edges first.)  Cut the “English Muffin” in half and lightly toast, if desired. We like to serve these for breakfast with a slice of cheese and a sausage patty!  You could even serve it with a few bacon strips, too!
